We have two options. Either you can do full export, and the other option you have, when you run a job, you can have incremental batch which will only take the updates. In this option it will take only the updates, it won't do the full export every time.
It will take care of deletes and any hard deletes. Additionally, it will take care of creates updates and deletes and add. One lead does take incremental as it is not reloading all the data every time.
