In your first question, I assume you are referring to the "process" parameter of the address cleansing properties. If so, the default value of "v+g" simply indicates that we want to verify and geocode with standard cleansing. It should cleanse all countries' addresses.
To your second question: Cleansing may return a lot of fields. It's not necessary that you map all of them to your Reltio model and store them on the platform - there is no simple answer to that, but I believe that if there is a reasonable likelihood that this data might be used by your organization in the future, it might be worth storing it starting today. I see you want to customize the output mapping attributes, could you please elaborate in what way do you want to do this? If I am understanding correctly, your ask is how to configure the input/output. This is done on the L3 (business configuration) - I will put a link to the relevant documentation piece at the end of this answer.
